Thanks again Georg, Redirect is just what I was looking for too. With both of these add-ons I'm good to go with Zendesk and Thunderbird.

This is great, thanks Georg :) Any chance you could add a button to convert an email into a support ticket? At the moment I forward them to my support address but then I have to remember to change the Requester.
